mugi miso

How is it nobody ever mentioned to me there was a mugi (barely) variety of miso? I've tried white miso and red miso and liked both, but this mugi miso is incredible. It has all the umami. It is strong and vibrant and delicious. With all the recommendations these days to eat probiotic food, I think I found the one for me! (Kimchi, I still love you, too.)
